Layered Salad

Ingredients: Croutons, diced tomatoes, finely chopped green onions, olives cut in rings, soft white cheese (e.g., manouri) cubed, finely cut lettuce, capers cut in half (to add fragrance and flavour), oregano, olive oil and salt.

Potato soup

Ingredients: 2 onions, 4 potatoes, 3 cups of water, 1 Knorr beef stock cube, salt, pepper, allspice, olive oil, 1 cup of milk, ½ cup of flour and ½ cup water.

How to make it: Sauté the onion in the oil. Dice the potatoes and place them in a pan together with the water and the beef stock cube. Add the salt, pepper and allspice. Bring to a boil. Remove and purée in a food processor. Add the milk and the flour. Stir until all the ingredients are unified. Serve hot, with Frankfurters cut in rings. 

Fish in a pot

Ingredients: Fish fillets (whatever kind you want), a few roughly chopped potatoes, 1 cup olive oil, oregano, 1 juicy tomato grated together with its juice, 1 cup water, chopped parsley, salt and pepper.

How to make it: Place the ingredients in the pot in layers. First the potatoes, then the fish, and then the tomato. Add the water, sprinkle the rest of the ingredients over the top layer and bake at 220ο C in a pre-heated oven for 30 minutes.

Note: No matter what we’re baking, the oven must always be pre-heated to the desired temperature.

Stuffed Eggplants

Ingredients: 5-6 aubergines, 800 gr. ground beef, 1 onion, 1 tbs. tomato paste, 1 tsp. sugar, salt, pepper, 4 clovers, 1 stick cinnamon

How to make them: Cut the aubergines in half lengthwise. Poke them with a fork a few times on the inside part and fry them in olive oil. As soon as they are fried, scoop out the pulp and purée it in a food processor. Let the aubergine shells drain. Sauté the ground beef with the chopped onion. Add the tomato paste, the water and the rest of the ingredients. As soon as the ground beef is cooked, mix in the puréed aubergine pulp. Fill the aubergine shells with the ground beef mixture. Put them in the oven for 15 minutes at 180ο C. Five minutes before taking them out, add a little grated Gouda cheese on top and bake until golden.
